Ingredients
½ head of Iceberg Lettuce
30 Grape Tomatoes
30 half rounds of Cucumber, about ¼ inch thick, from 1 English Cucumber
½ C Green Goddess Dressing (recipe below)
Cracked Black Pepper, to taste
Procedure
Cut the iceberg lettuce into ¾ inch squares so you have 30 pieces, 3 per skewer.
Place the ingredients for the salad onto the skewer, starting with the iceberg, then place the tomato, followed by the cucumber. Repeat 3 times for each skewer.
Place skewers on a serving platter, drizzle with the green goddess dressing, and sprinkle with cracked black pepper. Serve and enjoy!
Green Goddess Dressing
Ingredients
½ Avocado, peeled
¾ C Low-fat Buttermilk
3 T White Wine Vinegar
2 T Coarsely Chopped Fresh Tarragon
1 Scallion, coarsely chopped
½ t Salt
¼ t Black Pepper
Procedure
Place all ingredients into a blender and process until smooth. Extra dressing will keep for 2-3 days in the refrigerator.
